ROASTED ARTICHOKE HEARTS, GRILLED PEPPERS, AUBERGINES and ROASTED ONIONS, come from a small family business near Seggiano on Monte Amiata. The Angeli family believe in healthy non-industrial food production and work with only fresh local produce, some of which they farm themselves.

Similarly, only fresh herbs are used in their recipes, which do not include any preservatives. Seggiano roasted artichoke hearts have not, like many pale specimens on the market, been canned in salt water at any time; they are cooked and put up sott'olio fresh at harvest time - in the traditional way, and they taste wonderful.

The vegetables are grilled over red hot volcanic rock, which is preferable to charcoal since it doesn't release gases or leave ash, and the olive oil - a quality Canino extra virgin in which the vegetables are preserved, has excellent low acidity and can be used up afterwards for cooking.
